Deviled Eggs and Chives

This delicious easy deviled eggs recipe is perfect for using the wonderful taste of freshly chopped chives to spruce up your appetizer. You will find that this recipe works equally as well served hot as it does served chilled.


12 hard boiled eggs peeled
1/2 cup mayonnaise
2 teaspoons Dijon mustard
2 tablespoons chopped chives
salt and pepper to taste
paprika to garnish (optional)


Slice the peeled hard boiled eggs in half lengthwise
Remove the egg yolks and place them in a medium size bowl
Mix together the yolks, mayonnaise, Dijon mustard, chopped chives, and salt and pepper
Fill the egg halves with the mixture forming a well rounded top

Serve hot or chilled
