Lemon Herb Deviled Eggs

Here is a light and zesty easy deviled eggs recipe with the spring time fresh taste of lemon and fresh herbs. This is one of the wonderful simple recipes you can make anytime of year.


6 boiled eggs (chilled)
1-1/2 teaspoons fresh lemon juice
1/4 cup mayonnaise
1/2 teaspoon finely chopped fresh dill
1 tablespoon finely chopped fresh parsley
Salt and pepper to taste
Parsley leaves (optional)


Peel the chilled boiled eggs
Carefully cut the eggs in half lengthwise
Remove yolks and place them in a bowl
Mash the yolks with a fork
Combine and mix the yolks with mayonnaise and lemon juice
Stir in the herbs
Salt and pepper to taste

Fill the white halves evenly with the mixture

Garnish with parsley leaves (optional)
